Sarah's career began in professional hockey before making a hard turn to brewing. Building the brewery from the ground up in a remote town in Ontario means she has learned a lot - and very quickly!
The Bench production team has two sides to it, a clean side that produces consistent, fresh beers that make up the core portfolio and the 'wild' side that pushes the limits, leaning in to being the brewery in the middle of wine country and producing lots of barrel-aged beers with wine-soaked barrels from local vineyards.
Sarah led us through Short Hills NEIPA, Green Fields Sour (nicknamed tart and hazy) and finished off with the barrel-aged Appellation #5. This beer has been aged in a variety of red wine-soaked barrels from around the Niagara escarpment region. "Light, delicate, notes of lime and a little floral. It has spent 11 months in barrels conditioning and another year and a bit in bottles conditioning. With the brettanomyces in it, it'll be good to cellar for the next 2-3 years."
