This beer was a collaborative project, on multiple levels, with Small Pony Barrel Works. Brewed with Pilsner malt, spelt, oats, and special aromatic malt and hopped in the boil with aged hops. Soured first in stainless with lacto plantarum, then run over fresh lime leaves on it's way to foedre. Small Pony house yeast culture and 2 Crows house culture were added to foedre at the same time and the yeast were allowed to "duke it out in the oak" -- many yeasts enter, one beer leaves. Finished with a dry-hopping of more lime leaves, the result is incredible; turns out 2 Crows and Small Pony Barrel Works cultures play well together. Assertively tart, bright, with a fun herbal/lime character, and just a touch of funk.

2 Crows Brewing Co is the brainchild of husband and wife duo Mark and Kelly Huizink, and brewer Jeremy Taylor. Named after an old nursery rhyme that starts 'one crow sorrow, two crows joy', 2 Crows opened in January of 2017 in downtown Halifax. They brew modern beers, with the utmost care and focus on quality above all else. Their aim is to get people thinking about craftmanship, where their beer is coming from, and the various characteristics that make beer great.
