L’ écchymose (Bourbon Barrel)
Two iterations of this beer were produced and this is the bourbon barrel version. A big, fudgy body carries loads of chocolate with a gentle touch of blueberry that adds a hint of jammy fruit and acidity. The rosemary and cinnamon can be tasted but are very subtle. There is an aggressive hop bitterness and the bourbon barrel and cacao further dry things out, cutting through the richness of the beer and leaving a nice finish.
